I have used these on pumpkins for a couple of years now and they work great. Yes, there is a bit of a mess factor as there is some back spray, but do it outside and who cares?
Also, if you have a Costco near you, they have an off-brand Dremel like tool with a ton of attachments for about $25 or so. That one is more than adequate for most applications and the price is cheaper than getting the top end Dremel.
I don't think there will ever be one electronic device for every possible pumpkin cut...you still need the small simple saws for the tight places.
